Cookie Assessment Cupcake Wars 1st Round This rubric is a student team assessment of baked items prepared by Sugar and Spice students. The scoring will be utilized as a skills and leadership assessment. Rubric Code: SX42W77 By cbachtell Ready to use Public Rubric Subject: Vocational Type: Assessment Grade Levels: 9-12

Competition Assessment Students: Present 4 cookies to judges.
	Professional 4 pts	Practitioner 3 pts	Novice 2 pts	Beginner 1 pts
Texture & Flavor 5 pts Flavor & Texture of Cookie and Icing	Professional -Cookie flavor is an excellent example of expected flavors and beyond. -Full flavor -Ingredients were well blended and moist not dry	Practitioner -Cookie flavors were good. -The texture of the cookie and frosting prepared has correct.	Novice -Cookies over/under baked. -Not perfect in texture or flavor.	Beginner Texture of the cookie showed evidence of being over(dry) or under baked(gooey).
Technique 5 pts Did the icing flow smoothly and neat	Professional Ingredients well blended, smooth not grainy; perfect texture	Practitioner The texture and consistency was blended well.	Novice Frosting was smooth, but had a few ripples.	Beginner Texture of the icing showed evidence of being incorrectly creamed. Has "broken down" or dried too early.
Creativity 5 pts The design of the cookie goes beyond the norm.	Professional The team "stepped out of box" but with appropriate, exciting results.	Practitioner The team showed some creativity in design.	Novice The cookie was "the usual" of what you might expect from that pastry.	Beginner No creativity.
Mise en Place 5 pts Teams prepare ingredients & keep station neat and clean.	Professional Meets all Chef's expectations.	Practitioner Meets most of Chef's expectations.	Novice Failed to get work done in a timing manner.	Beginner No Mise en Place.
Appearance 5 pts Students are "ready for work" looking neat. Chef Coats, aprons, hair	Professional All criteria were met.	Practitioner All but one of the appearance criteria were met.	Novice Two of the criteria were not met.	Beginner More than two of the criteria were not met.
