Cooking Procedures

Demonstrates limited kneading techniques and limited application of how to use a pasta machine. Did not cook pasta to Al dente.

Demonstrates some kneading skills and some basic knowledge of how to use a pasta machine. Cooked pasta was close to Al dente.

Demonstrates a considerable level of kneading skills and use of pasta machine. Dough was kneading properly but missed a few critical steps along the way. pasta was cooked to al dente.
Excellent

Demonstrates a high level of kneading and use of the pasta machine. Pasta was kneaded properly. The use of the pasta machine was flawless and used proper techniques. Pasta was cooked at Al dente.
Cleaning/Mis in Place

Poor

Demonstrates limited kitchen cleaning and sanitation procedures. Did not have hair up, did not was hands properly. Did not show very good time management skills.
Fair

Demonstrates some cleaning and sanitation skills thought out the lab. Showed limited time management skills. Did not finish cleaning up in time.
Good

Demonstrates considerable cleaning and sanitation skills. Showed good time management skills but yet did not finish cleaning a few items.
Excellent

Demonstrates a high level of cleaning and sanitation. Everything was cleaned up and put away dry on the first attempt. Showed great time management skills.
