Safety	Poor None of the four safety measures were followed.	Fair Two or three of the safety measures were not followed.	Good The correct knife was chosen. The cutting board was properly set up with anti-slip precautions. The station had the appropriate containers for trash. whole product, and finished product. The table was properly cleaned and sanitized before beginning.
Personal Hygiene	Poor None of the personal hygiene procedures were followed.	Fair Two or three of the personal hygiene procedures were not followed.	Good Hands were washed properly before beginning. Hair was tied back if needed. Apron was properly worn. No jewelry was worn.
Knife Use	Poor None of the proper knife usage guidelines were followed.	Fair One or two of the proper knife usage guidelines were not followed.	Good The knife was held with three fingers wrapped around the handle with the thumb and the index finger on either side of the blade. The knife was moved in a tip to heel motion with the tip of the knife remaining on the cutting board at all times when possible. The guiding hand remained in a claw formation with the finger tips bent under the entire time.
