Identifies and solves problems independently. Serves and clears plates correctly. Serves beverages from the right. Service is discreet. Communication style is friendly, professional. Executes duties according to place in hierarchy of FOH brigade (Maitre d', Captain, Front Waiter, Runner.

Cleanup Operations

Safely transports tabletop items to dishroom. Follows scraping, soaking, loading procedures.
Fairly shares burden for dishes and cleanup.

Contaminates clean dishware, creating unsafe environment for serving food. or Fails to perform one or more functions in cleanup correctly.

Avoids cross- contamination of clean and dirty dishware. Performs all cleanup functions correctly.
Good

Organizes workspace and staff to ensure safe foodhandling in FOH.
Completes all cleanup functions quickly and efficiently.
Excellent

Demonstrates a mentorship level of cleanup. Assists peers and supervisors without being asked. Understands and maintains high standards of cleanup procedure and performance.
