Baking and Pastry Arts Final Exam 2022-2023
A rubric to evaluate the dessert for the 2021-2022 Senior Exam. The item must include butter, flour, sugar (brown, powder, or regular), and eggs. Optional salt, baking powder, baking soda, milk, buttermilk, heavy cream, and your 2 mystery ingredients. The item must have a frosting, sauce, or filling. There may NOT be any premade products or any additional ingredients that are not listed used in your final exam. Each student will present 3 of their plated item on Friday, May 5th at 1:00 pm

Plated Dessert
Flour, butter, sugar, Dairy, and eggs!!! You will create and document (write out the recipe, take pictures, and attach to the doc the process of making) a dessert using flour, butter, sugar, dairy and eggs plus you can use ONLY 2 other ingredients found in the kitchen ( salt, baking powder, baking soda does not count as one of your two).

Chopped Contest - Entrée
Teams will make an entree dish, and each dish will include either ribs pork belly or beef tri-tip you will draw your protein potatoes, and vegetables you can use any other ingredients in the kitchen. All of the items should complement each other and have a focus on cuisine. You will need to make a recipe for all the items attached to a google slide take pictures and describe what each team member did.

Mystery Basket Asian Inspired
Mystery Basket Practical. You will create an Asian inspired tasting menu. you will make 2 items using the foods from our kitchen. One item must be a composted salad the other item can be a sandwich or an entree. Be creative and have fun!!!! you will be graded from this rubric and ORGANIZATION will be another part of the grade.

Sugar Cookie Rubric
Students will be given a sugar cookie recipe and asked to divide the recipe in half. They must then complete the recipe from start to finish in 75 minutes with 25 minutes of freezer time, during which time students will complete a 46 question food-safety/menu items written exam.
