Appearance	Poor Yolks and whites barely mixed. Burnt and crispy edges, excessive browning or overcooked. Under cooked, runny egg visible on plate. Poorly folded.	Fair Yolks and whites somewhat mixed but still distinguishable. Browned but not actually burned or slightly under cooked, jiggly. Fold only slightly off.	Good medium to dark color on eggs but not burnt Yolks and whites well mixed. Neatly folded.	Excellent light to medium color on eggs omelette has holes or is slightly under cooked Perfectly folded and plated.	Perefect Perfect appearance.(light to no color) Perfect degree of doneness(eggs are cooked completely w/o a slimy appearance). Perfectly folded and plated.
Texture	Poor Pieces of shell in omelet. Eggs either very rubbery or very runny.	Fair Greasy looking. Eggs either under cooked or overcooked.	Good Eggs either too slightly runny or too hard.	Excellent Eggs either too slightly runny or too hard. or not neatly folded	Perefect Eggs nice and light, glossy texture, soft. Cooked to the proper degree of doneness.
